I started to make this pizza after
Denizen Rum sent me a couple of recipes including a superb grilled peach smash called Georgia
Summer.
When I first grilled peaches for that drink, I discovered the wonders of grilling fruits and particularly fleshy peaches.
This pizza is heaven. It combines
the grilled peaches with my favorite plain goat
cheese and the contrast is superb.
½ pizza dough recipe
2 peaches sliced and grilled (4 minutes each side)
1/2 cup fresh goat cheese
Corn meal (for the pizza peel)
8 basil leaves cut into stripes
Extra virgin olive oil
In the middle rack of the oven,
preheat a pizza stone to 450°F. Sprinkle the cornmeal on a pizza peel. On a
floured surface, with a roller, extend the dough and place it on the pizza
peel. Evenly distribute the goat cheese and the peaches. Place the pizza on the pizza stone and bake it for 10 minutes. Take
the pizza from the oven. Let cool down for 3-5 minutes. Drizzle with olive oil,
sprinkle the basil and add some drops of balsamic vinegar reduction.
