1, 2, 3 Mixed Berries Rum Marinade

Inspired by The King of Cocktails, Dale Degroff —who has a similar recipe in his book The Craft of Cocktails— I came up with this recipe, the first one of my #RumChallenge.

No doubt this is the easiest way to jazz up a bowl of ice cream, a cheesecake, a pana cotta or a drink. Just combine mixed berries (strawberries, blueberries and raspberries, in this case) with some rum and sugar and let it marinate for a couple of hours. Don’t be tempted to leave it overnight. You want the fruits to look and taste fresh.

Mixed Berries Rum Marinade | Ingredients for 1 cup
½ cup of blueberries, rinsed and dried
½ cup of raspberries, rinsed and dried
½ cup of strawberries, stem removed, quartered, rinsed and dried
½ cup of sugar
1 oz Ron de Venezuela Santa Teresa Añejo
1 oz Rhum Orange Liqueur

Combine all ingredients and let them marinate, covered, for at least 4 hours.
