A Healthy Start: Oatmeal with Spices, Berries and Maple Syrup

This is not a New Year’s resolution.

This is a very common breakfast, Monday through Friday, in my house.
The oatmeal is pretty much the same, what makes it so attractive are the toppings. 
Sometimes it's fresh berries like today's strawberries or his favorite blueberries or blackberries, or even better a combination of two or three different berries. Sometimes it’s raisins and apples, or dried berries and fresh bananas.
Since salt enhances the flavor of the oatmeal and spices, I add just a pinch. I like mine “plain” with some maple syrup and, trust me: there is no better way to start your day!
Oatmeal with spices, berries and maple syrup | Ingredients for 2 portions
3 cups of water
1 Tsp. of vanilla extract
¼ Tsp. of ground cinnamon
1 pinch of freshly ground nutmeg
4-5 Tsp. of Splenda (or sugar)
1 pinch of salt
1 ½ cups of oatmeal
1 cup of strawberries sliced
¼ cup of maple syrup

In a pan put the water to boil on medium heat. Add all the ingredients but the strawberries and the maple syrup. Boil for 5 minutes, stirring. Set apart and let stand for 1-2 minutes. Serve and top with the berries and maple syrup.
