Sublime & Refreshing: Peach Mojito

Back in 2007, we planted a plum tree and a peach tree. The plum tree is now full of fruit and we’ll be harvesting them pretty soon. The peach tree is a dwarf and this summer gave us the sweetest fruit ever.

The good thing about having your own kitchen garden and orchard is that you can afford to eat the freshest organic vegetables and fruit ever. The ‘bad’ thing is that you must be creative so you don’t get bored having the same kind of food during a short period of time.
So, when I got these peaches, I decided, among other things, to create a mojito and enjoy the Ron de Venezuela that we missed during our week in the desert. Instead of mint, I chose spearmint and as usual I substituted sugar with Splenda.

Once again, I used Ron de Venezuela Santa Teresa Selecto, an extra aged rum añejo, because I had a bottle at home. But I think Santa Teresa Añejo (known in Venezuela as Gran Reserva), will work just as good as Selecto.
Not only this cocktail has a superb color, but a sublime flavor and it’s absolutely refreshing. I made a virgin one for my children and they loved it.

Here is the recipe, salud!
Peach Mojito
1½ oz of Ron de Venezuela Santa Teresa Selecto
1 oz of fresh lemon juice
4 teaspoons of Splenda
½ peach peeled and diced
15-20 spearmint leaves
Club soda
In a boston, muddle very well all ingredients but the rum. Once the rum is added, shake with crushed ice. Pour in a highball glass filled with crushed ice. Top off with soda. Garnish with a slice of peach and a spearmint sprig.
